
Caldwell's Grant is pleased to introduce their head chef, James Renaud. James replaces Laura Giberson who has taken an undetermined leave of absence in favor of full time motherhood. James, largely self taught, has been cooking in professional kitchens for over 20 years, and has sharpened his culinary skills in many area restaurants and country clubs. He realized his passion for cooking and fine cuisine at a relatively young age, and has developed his talent along side some of the areas most accomplished chefs.
Inspired yet unassuming, his ability and talent for experimentation has formed the basis for his creative signature style. James' cooking is inspired by the seasonal ingredients obtained from local purveyors, and by the satisfaction derived from creating the most enjoyable experience possible for each guest, his greatest reward in seeing the pleasure on the faces of our patrons.
He believes that eating is more than just a means to fuel the body, but rather a wholly sensory adventure, beginning with presentation and taste, but encompassing as well, aroma, texture, contrast, and ambiance, all put together to create the experience of memorable cuisine. James believes that in Amherstburg, as in any tightly knit community, it is most important to recognize who your patrons are, and promises to exceed his guests' expectations in every circumstance, no matter the request. In his own words, "If it's possible, we will do it".
